Title: French Dijon Ham Muffins

FROM J.R'S KITCHEN
1 2/3cFlour
1/3cCornmeal
1/4cSugar
2tsDry mustard
2tsBaking powder
2/3tsSalt
1/2tsBaking soda
1/8tsCloves
1cChopped cooked smoked ham
2 Egg, room temp.
1cButtermilk
1/3cOil
3tbDijon mustard

Mix together the first 8 dry ingrdeints. stir in the ham. In another bowl combine wet ingredients.Pour into well in center of dry ingredients and mix quickly. Spoon into muffin cups 3/4 full. Bake in a 375 oven until done and browned.12 to 14 muffins, main course type.esp. good at breakfast.Note:May want to cut down on salt as ham and dijon themselves tend to be salty.
